What are the resale value like on these premium sets? I know that is a very broad question because there are many factors but do they hold their values?

I ordered just the Sovereign this time. A premium coin that will sell out but won't make me money in the short term. Love the design and want one.

Remember that 3 coin sovereign sets often end as bullion + 10%.

I bought a 1989 3 coin set 3 last year for £1275 and broke it down and graded it. This one may have some short term flipping potential via eBay but after fees it will be minimal.

Historically the Full Sov is the only one with a good premium. Better to buy 3 x Sov in this case than the sets.

A good point.

I'm banking on the American market really going for this and that more than 500 people will want a set.  I don't think that's an unrealistic expectation, especially given the one-off design. 

I do think this will be a quick-flip whilst people scramble for it, as opposed to a long burner.

At the current gold price, there is 2,140 quid's worth of gold in a 5 coin set give or take, so a 50-60% premium for the set. Not interested in flipping but good luck to those who do. I am getting in now to avoid the flippers :) Made my mind up on that a long time ago.
