The Marsh book will give you mintage numbers, for example;

2009 Proof - Mintage 9770

2010 Proof - Mintage 8828

I don't believe the mint set out to mint those numbers, but are really a reflection of the amount of coins sold. 

The Marsh book contains most mintage numbers for Elizabeth II Proofs (a few are listed as 'Not Known' such as 1976 'brilliant proof').

If its the older coins you are interested in, the proof mintages are not known. From glances through all listings of proof mintage are 'Not known' from George III to George V. Given the access the author had to the mint records, I assume there are no such records.

It won’t help post 2006 editions however, it’s a nice straightforward reference for the other couple of hundred years. Not sure just how accurate it is and I’m sure there’s a better resource if anyone cares to share please?
