The knives will be weighted as well so will contain much less silver than their total weight.

I've been looking out for a set with solid silver blades for a while now but the ones on ebay often have missing/damaged pieces or ask silly prices.

Anything, at all, over the best scrap price would be good for these.  Lovely items as they are, in the cold light of day they are 80% solid silver spoons and forks and thin silver knife handles.

If they were mine I'd use them until the price of silver shoots up to get the best of both worlds.

Most of the flatware I've been casually bidding on lately tends to go for just over spot, with or without fancy boxes and information about their origins. Occasionally you'll see one with a good maker's name on it or some seriously fancy patterns doing a lot better, when two people who know and care about the historic significance bid against one another.

I tend to avoid anything with non-silver parts, and my search terms always exclude results with EPNS, plated, etc.

Solid ones are uncommon and tend to be simple in design.  Silver is a bit soft for use in a knife and making a round handle would use a lot of silver.  Most older sets don't include knives.  The silver handled knives are more of a Victorian item afaik.
